White Sapphire is a hybrid variety from the genus Selenicereus Undatus that is self-pollinating and will set fruit without hand pollination. The fruit is small to medium typically weighing .75 to 1 pound.
The fruit sweetness measured on the refractometer has a brix results of 16 to 17. The flesh is tangy with a smooth texture having pink tinted hues. the fruit texture is so much and does feel ike melting in one’s mouth.
The fins on the fruit are typically longer than other pink varieties. Flower budding to flower is 30 days and another 30 days from flower to fruit. Flowers are very typical of Hylocereus undatus in size, shape, and color but don’t open as fully as the other white flowered varieties. The stems of this variety are typically three sided with small spines. This variety is extremely fast growing. Some growers have claimed that they got first fruit from cutting in 1 year
