Asunta 5 Edgar, later rebranded as Asunta 5 Sunset Sherbert was created by Edgar Valdivia a member of the California Rare Fruit Grower organization, this variety is an improvement of Asunta 4 pollinated  with Tricia.
Essentially Hybridizing a Selenicereus Guatemalensis with Selenicereus Stenopterus. 
The flower is Pink and is self-sterile, cross pollination is required. The fruit is larger than Asunta 4 and average 1 to 2 Lbs.
 
Asunta 5 Sunset Sherbet is a variety of dragon fruit that was previously known as Asunta 5 Edgar. Richard Le of Grafting Dragon Fruit renamed it in 2021 to distinguish it from the official Asunta 5 variety, which is also known as Asunta 5 Paco. 
Taste: 
Flesh of the Asunta 5 Sunset Sherbet dragon fruit tastes very sweet with a mild tartness flavor that's similar to guava-berry or mixed berry
The flesh of the Asunta 5 Edgar variety is deep magenta
